A cupcake a day keeps the doctor away! // Muffinssi päivässä pitää lääkärin loitolla!

A fun fact: Recipes from Pinterest actually work better than the ones in my actual cookbooks. :D

Even though one of the books especially states: " Every recipe is triple tested!!", I can't help but fail almost every time. I feel like my kitchen senses that the recipes are originally american and refuses to let me succeed..
Remember those lovely donuts I made for the first time in the beginning of May? Yup, as you can guess, I found a Boston Cream recipe transformed into a cupcake form. :3

Was I excited..? HELL YEA! So without further ado, let's get into baking!

For the cupcakes

3 1/2dl (1 1/2 cup) Flours
1 1/2 tsp Baking powder
1/2 tsp Salt
1 1/5dl (1/2 cup) Milk
85g (3oz) Butter
3 Eggs
2 1/3 dl (1 cup) Sugar
1 tsp Vanilla extract

For the vanilla cream

2 Egg yolks
2/3dl (1/4 cup) Sugar
2 tbsp 
1/2 tsp 
Cornstarch
Pinch of salt
2 1/3dl (1 cup) Milk
1/2 tsp Vanilla extract

For the chocolate glaze

1 2/5dl (2/3 cup) Cream
170g (6 oz) Dark chocolate
1 tbsp Light corn syrup

Start with the vanilla cream since it needs to cool down at least 1h in a fridge.

Beat the eggs lightly and briefly in a small bowl to break the texture.
Mix sugar, cornstarch and salt in a small pan and place it on medium heat. Then pour the milk in a steady stream into it while mixing constantly. Keep stirring until the mixture bubbles and thickens a little bit. 
Pour 1/3 of the mixture into the egg yolks and keep that hand whisking! Pour the egg mixture back into the pan and keep cooking until it thickens more. (2-4 mins) At last stir the vanilla extract in. 
Pour the cream through a sieve into a bowl and place a plastic wrap straight on the surface of the cream to prevent forming a skin. Put it in a fridge for 1h.

Then to the cupcakes.
Preheat the oven to 175°C (350 F)
Mix together the flours, baking powder and salt in a bowl. At the same time, warm up the milk and butter on a stove. 
Beat the eggs and sugar in another bowl until thick. Then beat the flour mixture in.
Bring the milk mixture to a boil and then pour it gently into the batter while mixing on a low speed constantly.
Divide the batter into a cupcake tin and bake them for about 15mins until golden brown. 

While the cupcakes are baking/cooling down prepare the chocolate glaze.
Bring the cream to a boil and then melt the chocolate and syrup in it. Whisk until smooth and then transfer it into a bowl and let it cool down before using it.

Okay, let's build the cupcakes!
I found the original burger-like presentation boring so I used the similar technique I had in my donuts.
Hollow out the centers of the cooled down cupcakes and pipe some of the vanilla cream into the hole. Then spread a bit of the glaze on top and there you go!

Hauska fakta: Pinterestin reseptit toimivat paremmin kuin kunnon keittokirjoissani olevat. :D

Vaikka yksi kirjoistani erityisesti korostaa: "Jokainen resepti testattu kolmeen kertaan!!", en voi muuta kuin epäonnistua melkein joka kerta. Tuntuu kuin keittiöni aistisi, että reseptit ovat alun perin amerikkalaisia ja ei anna mun onnistua..
Muistatteko ne ihanat munkit, joita tein ensimmäistä kertaa toukokuun alussa? Jep, kuten voitte arvata, löysin Boston Cream reseptin räätälöitynä muffinsseja varten. :3

Olinko innoissani..? Totta helvetissä! Joten pitemmittä puheitta, aloitetaan leipominen!

Muffinsit

3 1/2dl Jauhoja
1 1/2tl Leivinjauhetta
1/2tl Suolaa
1 1/5dl Maitoa
85g Voita
3 Kananmunaa
2 1/3dl Sokeria
1tl Vanilijauutetta

Vaniljatäyte

2 Keltuaista
2/3dl Sokeria
2rkl + 1/2tl Maissitärkkelystä
Hyppysellinen suolaa
2 1/3dl Maitoa
1/2tl Vaniljauutetta

Suklaakuorrute

1 2/5dl Kermaa
170g Tummaa suklaata
1rkl Vaaleaa maissisiirappia

Aloita vaniljatäytteestä, koska sen pitää jäähtyä tunnin verran jääkaapissa.

Riko kananmunien rakenne kevyesti kulhossa.
Sekoita sokeri, maissitärkkelys ja suola pienessä kattilassa ja laita lämpenemään keskiteholla. Kaada maito kattilaan jatkuvana nauhana koko ajan sekoittaen. Jatka sekoittamista kunnes seos pulpahtaa ja sakenee hieman.
Kaada 1/3 seoksesta keltuaisten joukkoon ja muista sekoittaa koko ajan! Kaada keltuaisseos takasin kattilaan ja jatka keittämistä kunnes seos on sakeaa. (2-4min) Lopulta voit lisätä vaniljauutteen sekaan. Siivilöi täyte kulhoon ja paina kelmu suoraan sen pinnalle, jotta siihen ei muodostu kuorta. Laita jääkaappiin jäähtymään tunnin ajaksi.

Sitten muffinssit.
Esilämmitä uuni 175°C
Sekoita keskenään jauhot, leivinjauhe ja suola. Lämmitä samaan aikaan maito ja voi kattilassa.
Vatkaa kananmunat ja sokeri kuohkeaksi vaahdoksi. Vatkaa jauhoseos mukaan.
Kiehauta maitoseos kattilassa ja kaada taikinaan koko ajan vatkaten alimmalla nopeudella.
Jaa taikina muffinssipellille ja paista noin 15min kunnes ne ovat kullanruskeita.

Sillä aikaa kun muffinssit ovat paistumassa/jäähtymässä, valmista suklaakuorrute.
Kiehauta kerma kattilassa ja sulata suklaa sekä siirappi sen sekaan. Sekoita kunnes kuorrute on tasaista ja kaada se sitten kulhoon jäähtymään ennen käyttöä.

Okei, kasataampa sitten muffinssit!
Mielestäni alkuperäinen hampurilaistyylinen esillepano oli tylsä, joten käytin samaa tekniikkaa näissä kun munkeissakin. Koverra muffinssit keskeltä ja pursota vaniljatäytettä vähän kuoppaan. Levitä ohut kerros suklaakuorrutetta päälle ja kas noin!
